Requirements
- Min years' experience as Restaurant Manager
- Experience in 4* or 5* operations (Hotel and/or cruise ships)
- College Degree/Diploma or relevant apprenticeship in the F&B Service industry beneficial
- Highly proficient in spoken and written English
- Budgetary knowledge

- Overall responsible for ensuring professional and courteous service within the Food & Beverage department according to the Company standards and procedures
- Active involvement in daily operations and leading service station if required, including serving food and beverage items according to the Company standard and procedures
- Always being up to date with the Company standard operating procedures, particularly for the Food & Beverage department, and ensuring its implementation
- Distributing information within the team and exchanging information between departments
- Preparing the duty schedule following legal requirements
- Familiar with all itinerary-related ports of call and shore excursions
- Taking an active role in creating a positive environment between all departments onboard and encouraging an open and respectful communication
- Conducting regular briefings and meetings ensuring smooth information flow for the crew and participating in Head of Department-Meetings conducted by the Hotel Manager
- Conducting frequent training sessions for the Food & Beverage department
- Ensuring proper welcome and introduction to the team of new joining crewmembers
- Evaluating Restaurant, Bar team and Butlers in assistance with the Asst. Restaurant Manager and the Bartender and providing feedback to crewmembers including performance-enhancing action plans if necessary
- Monitoring and ensuring necessary disciplinary actions are taken and administered according to the Company standard.
- Supporting and encouraging talented crewmembers with further career steps, following the Company HR operating standard
- Retaining full knowledge of Food & Beverage menu
- Reaching cost, revenue and rating targets and implementing necessary improvements or actions if needed
- Reviewing cruise questionnaires and addressing tops and flops within the Food & Beverage department, including taking appropriate actions if needed
- Conducting quality checks
- Ensuring active involvement in reaching higher guest satisfaction, including participating in additional Entertainment activities as per the Company standard
- Ensuring proper stock handling, including reaching cost targets and implementing necessary improvements if needed
- Welcoming and greeting of guests according to the Company standard
- Being aware of the guest's specific needs and dietary requirements and recommending suitable alternatives
- Performing special duties during additional F&B events such as Farewell Parties
- Ensuring proper set up as per Company standard
- Public speaking such as menu presentations
- Cleaning and polishing of china, glass, and silverware
- Dealing with guest complaints and informing Hotel Manager if needed
- Keeping a record of breaking list and monitoring amount of breakage and damage and notifying Hotel Manager if necessary
- Responsible for ensuring and maintaining cleanliness front and back of the house according to HACCP regulations, including monitoring the compliance with legal requirements
- Observing slow running stock items and expiration control of Restaurant and Bar products
- Responsible for the monthly inventories, purchase orders including equipment items, and delivery control
- Following up on pending maintenance/stock requests
- Ensuring proper storage use
- Ensuring correct handling of all equipment and machinery
- Preparing and monitoring the department's vacation planning following the ships overall vacation plan
- Participating in all Safety Drills as per Captain's orders and ensuring solid knowledge of designated Safety role
- Ensuring the Food & Beverage department has a full understanding of the designated Safety role, duties and in-port-manning
- Reporting any potential Safety hazards immediately
- Participating in relevant Corporate training sessions
- Fulfilling further job-related duties as instructed by the Supervisor, such as luggage service, loading, and garbage off-loading
- Assisting other departments as per the Hotel Manager's instruction
